Essential Grocery List for a South Indian Kitchen

A well-stocked pantry makes everyday cooking easy. Use this list as a starting point for your monthly shopping and adjust quantities for your family.
Rice and batter
- Ponni or your usual everyday rice
- Idli rice and urad dal for idli and dosa batter
- Raw rice (pachharisi) for pongal and sweets
- Rice flour for kolam, murukku and quick dishes
Dals and pulses
- Toor dal for sambar and rasam
- Moong dal for pongal and kootu
- Chana dal and urad dal for tempering and vadai
- Chickpeas, green gram or horse gram for sundal and kuzhambu
Spices for the tempering box
- Mustard, cumin and fenugreek
- Dried red chillies and black pepper
- Turmeric, chilli powder and coriander powder
- Asafoetida (perungayam)
- Sambar powder and rasam powder, if you do not make your own
Oils and fats
- Gingelly oil (nallennai) for kuzhambu and podi
- Groundnut oil for everyday cooking and frying
- Coconut oil, if you use it
- Ghee
Other staples
- Tamarind
- Jaggery and sugar
- Salt
- Rava, vermicelli and poha for quick breakfasts
- Tea and filter coffee powder
